Roasted Brussel Sprouts, Bacon & Apples

SO. STINKING. GOOD.
I’m completely convinced that when combined with a caramelized coating & crispy bacon ANY item can taste amazing. Hence the brussel sprouts being inhaled by every member of my family. Even this one…
“Don’t take my PICTURE!”

The recipe is from EveryDay Food & is as follows:

Ingredients

* 3 slices bacon, cut into 1/2-inch pieces
*4 pints Brussels sprouts, ends trimmed and halved
*Coarse salt and ground pepper
*1 apple, cored and cut into 1/4-inch slices, each slice halved crosswise
*2 teaspoons red-wine vinegar
  1. Preheat oven to 425 degrees. Arrange bacon in a single layer on a large rimmed baking sheet. Bake until browned, 10 minutes. Add Brussels sprouts in a single layer; sprinkle with salt and pepper. Roast until they begin to brown, about 15 minutes.

  2. Remove from oven, and toss in apple. Return to oven; roast until Brussels sprouts are browned and tender and apple has softened, 10 to 15 minutes.

  3. Toss vegetables with vinegar, and serve immediately.

I love brussel sprouts, but my hubby turns into a 2 year old toddler girl when they're on the menu (which is basically never). Do you mean that 2 year old toddlers actually will eat them with this recipe? I HAVE to try it!

I tried this tonight, finally, but it didn't turn out like yours. Do you leave the bacon in the pan or remove it, I left mine in and it was burnt by the time I finished. Also, did you toss the sprouts in oil before roasting? My dish turned out really dry and didn't look anywhere near as apetizing as yours does in the photo.

I made this at Thanksgiving. Fantastic. Even the kids raved about it. We have requests for a repeat performance for Christmas, and I’m making them again tonight too. I’m adding a little more apple and had 2 zucchini in the fridge to use up, so am going to throw those in too. This is on my Pinterest board which I think has sent a bunch of people to your blog. Thanks!

I just made this tonight (actually eating it right now!) and it is SO GOOD! It was so easy to make and so delicious! The bacon is perfectly crispy and goes so well with the brussel sprouts :) I did leave it in a little longer but that’s only because I like my brussel sprouts really, really dark! Thanks for posting this!

OK, so brussell sprouts, the only thing my daddy ever made me eat. I hated them. If only my mom would have had this recipe. These look delicious, maybe after 50 years Ill learn to love them as much as my daddy.

Just made this tonight! I only cooked the bacon for 5 minutes, brussels sprouts for 10 and then tossed them with the apples and baked for another 5. We have a crazy oven, but I just thought I’d mention in case anyone’s having problems with over-cooking. I also skipped the vinegar step (because we didn’t have any) and it was still delish! Thanks so much for posting. I will definitely make this again!

I kept an eye on my sprouts (I use precooked bacon) and they were VERY toasty after the first ten minutes. I shortened cooking times by half after that and everything was perfect. I have a newer gas oven (seems like my convection oven) and I, too, have to keep an eye on everything. Super yummy recipe. Additional comments below:-)

I really don’t like brussel sprouts and I don’t want to make this and still hate brussel sprouts and have a wasted dish. Can I substitute broccoli or cauliflower instead?

Reply

Natasha January 26, 2013 at 8:07 pm

It’s worth a try! I’d go for cauliflower…not so sure about the broccoli apples combo. Let me know if you do!

I came across this recipe and REALLY wanted to try it…but I didn’t have any bacon or any sweet apples. I used Coconut Oil and a more sour apple. The Coconut Oil was great, but I definitely recommend a sweet, tough apple. Will most definitely make again.

BTW, all my kids, ages 9,11,13, and 15 eat Brussels sprouts regularly and love them.
